These delicious potato pancakes are often served with applesauce and sour cream.  I can't decide which is better, so I eat one with applesauce, one with sour cream, and repeat.

I don't like salsa, but this one I could eat with a spoon - forget the chips!  The chips are just the carrier!

I grew up on this Tamale Pie and it was always more labor intensive - but if you substitute 2 boxes of Jiffy Corn Muffin Mix you cut the steps in half and it is just as tasty.  This is also the quick cook version.

Wake up to a house smelling great. This dish is almost like bread pudding and makes a great side dish, especially with whipped cream on top. It's best to use canned peaches instead of fresh. Also great with berries.
