    Some organic things taste better than regular, and vice versa. Have some health issues in the family so I do buy best quality/least processed options for home. If I'm not eating at home, I just enjoy what is available. Makes it easier to not have to sweat it.

    The slice of tomato on top is really pretty plus it gets that lovely roasted tomato taste to it when baked. They're also pretty with snipped herbs on top. They're also really nice if you line the muffin pan (after you've given it a shot of cooking spray) with a single slice of prosicutto...

    I do one with parmesan, provolone, asiago and romano cheeses mixed in with a bit of oregano and garlic (sometimes some spinach or arugula as well). Slice of tomato on top and a sprinkle more of parmesan and oregano.

    Nuts are full of protein. You could also do oatmeal with almond/soy milk. But if someone has a very limited diet, they are going to have limited choices. You can't get around that.

    You can do mini-quiches (no crust) in a muffin pan. They are very versatile with fillings, easy to make, and keep on a warmer well - better than scrambled eggs, IMHO.

    Madeleine, enjoy the ice cream maker - it's really a lot of fun. I'd also recommend treating yourself to David Lebovitz's Perfect Scoop cookbook....the chocolate ice cream recipe alone is worth the cost of the book.

    We have industrial shelving in the storage area of the basement designated for "kitchen overflow" as I have more baking and bundt pans than any sane person who is not a professional baker could possibly need. I have my eye on a Cuisinart or Breville high end ice cream machine next.
