I thought of you all when I saw this, a great vegan dish or vegetarian dish. Esp this time of year when the zucchini and tomatoes are in abundance! (parmesan optional)
and, as a guest I would love this, as a side with scrambled eggs and ham and some fresh biscuits (for the non vegan guests) :)

I made a similar dish with layered potatoes, eggplant and tomatoes, with both parmesan and mozzarella on top. Really good, and vegan if you leave the cheese out. Very good.

Yummy....I think you have to leave the pesto out too for vegans because it has a grated hard cheese in it.

Bought pesto comes with cheese, so you are right Samster not very vegan. Just subtitute with fresh basil.
