No, I do not freeze them. Since my guests this weekend requested 2 different coffees each morning, I have several 1/2 roasts in waiting. Those I store in pint mason jars with lids. Of course, it will not sit more than a week as I will have used them up for my coffee.
Reminds me, I have been trying to order more beans for the last 2 weeks!

I don't. I keep them with my other spices in a cool dark place until I grind them. I grind about enough for half the week, and then store *that* in the fridge.

Reminds me of the storing of bread in the fridge, when in actuality it turns it stale quicker than out on the counter. It may mold slower, but goes stale quicker.

Where can you get one of those one-way valve bags?.
They have them at Wal Mart. I can't remember the brand name now..but it comes as a kit with the bags and the little extractor thing to take the air out.
