I saw a recipe for eggplant 'bacon' on FB and looked it up. Might be an awesome treat for vegans. Have you tried it? Most importantly, if you have, have your frozen and reheated it?
I can see having it on hand, but it would be an extra hassle to make in the morning.
Slice eggplant
Add oil, liquid smoke and other flavorings depending on which recipe you choose - some use paprika, some use soy sauce and some use maple syrup.
Bake at 375 for 30 - 40 minutes. One recipe had it bake at 400 for 10 minutes.
