So, my website can be seen under http:// and https:// but I've never defaulted, should I?
And it appears that some of my photos are coded with the http:// for some reason, is there an easy way to make them relative in WP so they work under both?
Is there a reason that I should default to https?

Yes, default to https. I've gotten warnings from Google that in October my site will start displaying warning messages on chrome that it is not secure. Could scare off folks who don't realize what that means.

Few months late but if still wondering the plugin Really Simple SSL makes switching to https:// very simple (just requires a properly installed SSL certificate).

All websites really should be fully https now especially given how cheap (or free with Lets Encrypt) SSL certificates are.
