i agreed to cater a graduation party this coming saturday for a nice elderly lady's granddaughter. there is illness in the family and the lady is a friend. she gave me the money to buy the food ... she wants me to make lasagna and chili and have a fruit salad, punch, garden salad, a meat/cheese tray, chips, finger rolls and desserts. coffee/tea Someone is providing a cake and sodas. i think that's everything. she'll pay me a bit for doing it, but not a lot ... it's more a favor than anything else.
another woman had said she would help, but has bailed on me due to personal problems.
i guess it will be okay ... but i'm starting to feel anxious. i've bought what i could of the ingredients but will have to get all the perishables probably friday after work.
any advice from you-all? it's been a while since i've cooked for a crowd. and never this big. i'll do the cooking in the commercial kitchen of the hall saturday morning. maybe thursday night i could make brownies and cookies.
