Do you think you could mix up the batter and put it in the refrigator over night put it in the muffin tins and bake in the morning? I have been using crandberry orange muffin mix and putting some fresh zest in and it is yummy.
We freeze the batter in a muffn paper in the tin and then put them in ziplocks. The morning of we take out how many we need and bake fresh. Others that need more finishing we bake and freeze and reheat.I think it would be better to bake them when you can and reheat. If they need to rise, the dough will be dead by morning..

We do it with our blueberry muffins. Put them right in the oven right out of the freezer frozen and cook the same amount of time. It takes longer for 4 muffins than 2. Cool. How long do you have to let them thaw before putting it in the oven?

DW does the exact same thing. She has done it with several different recipes, all with excellent results. She bakes a variety of muffins, all at one time and it works great!We do it with our blueberry muffins. Put them right in the oven right out of the freezer frozen and cook the same amount of time. I have not tried it with my others yet as they get toppings. But the blueberry muffins come out fantastic. People say "These are wonderful - you must have baked them fresh this morning?" and we say "yes" because we did!
I have heard this does not work with all muffins. But I make a dozen or two at a time, freeze in the papers in the pan and once frozed pop in a ziplock.

This might work for me. I use pans that look like small bunt cakes. I make muffins in them and when I serve I put the butter in the middle. The Morning Glory Muffin is like that also.
