Long term (12 nights) guests are leaving at the crack of dawn and told us they'd be up and out.
We will put a 'to-go' breakfast out the night before.
We thought of muffins, trail mix and canned juice. We always have granola bars and snack pack cereals out.
Suggestions?
Would you put lunch bags out so they can pack a 'picnic?'

We've packed it up for them and popped it in the guest fridge the night before with their name on it. Nothing perishable. Don't forget napkins. Usually, anything is appreciated. They can get something else at the airport or a diner if it's not enough.

Whole fruit too. Bananas, oranges, apples.
Maddy, do you pack it in a bag for them? I could make that very cute.
We don't have a central 'fridge. (We will, it's on the list.) So things that can sit out.

Yes, I pack it in a bag. Usually a paper bag with handles. Because we have the fridge I put in yogurt, juice boxes, fruit and cookies, if I have any left over. So, also spoons and napkins.
Generally I only do this for guests taking the train. Anyone else leaving super early doesn't usually want anything or they help themselves to cereal and coffee.
Oh, yes, I leave out to go cups if they want to make coffee or tea.

When I bake scones, I always make extra and individually wrap and freeze them. When guests say they're leaving early, we tell them that we'll leave them something in the dining room with their name on it. I don't have a fridge in the guest area so I can't put out anything perishable. However, I put a couple scones and to-go coffee cups in a bag with their name on it telling them to enjoy their day. I just realized that I also have some mini cans of pineapple juice that my daughter bought and isn't drinking - teenager changing her mind. So I'll put two of those in there as well so they have coffee, juice and a big scone.

I have made the sour cream & chive bake (recipe here on Innspiring) and either cornbread or the English Muffin bread (on here) baking both eggs & whichever bread in 2 8x8 square pans. Cut the bread like a layer that is going to be filled - because it is. remove top and place bottom portion over the egg bake - Flip. Put top on your 8x8 sandwich and cut into 6 pieces. Each person gets 2 "sandwiches". Wrap in wax paper so it can be heated in a nuker if wished (it is also good cold). I add one of those cheap Gl ad individual size plastic w/lid containers of mixed fruit - but apples, bananas, or oranges would also work, spoon, fork, bottle of water (cold and that keeps the rest cold), napkins, and a .5 oz bottle of waterless hand cleaner. My horse lady from SC wants a container (larger Gl ad w/lid) of the baked oatmeal. She eats it as she waites to cross the border into Canada. I put the vanilla yogurt in another container or add a couple yogurts plus the rest of the above. Coffee to go cup is also standard. She usually leaves here at 3 AM and even I am not getting up for that.
Steal an idea from BK - make French toast in "sticks" rather than slices. Use one of those above mentioned containers (I do not think they were even 50 cents per as they come in packs of 6 or 8 - cannot remember) for syrup as the entree.
I have some small size shopping bags I put the to-go breakfast in.

This year a fair amount of people wanted to go breakfast as it was their last night here wanted to leave very early. So we bought lunch bags that were cloth. In it we packed granola bar, fresh fruit, can of sparkling juice. Muffin, pat of Butter, and a small yogurt & spoon, plastic knife,2 napkins one for the lap and the other just to have. A moisture handy wipe, Oh yes and gum. We put that into their fridge over night.
They can take the pop and water with them if they wish. As that is in the fridge every day.
A few times they would eat it and then go or some would leave what they didn't want. The cloth lunch bags I bought in the dollar store while down south.

I used to do this for the folks that had to get up super early to catch a morning flight. I would usually put a single serving yogurt, some kind of starch (muffin, croissant, pumpkin/zucchini/pear bread), single serving OJ or cranberry juice, a banana or apple, and napkins, single package wet wipe, mint, and a spoon. I would substitute a hard boiled egg on request for diabetics instead of the starch.
Put it in the guest fridge for them to grab in the morning (name on it if it was in the shared guest fridge) with some kind of cute note. What can I say? I used to like to put notes in my kids' lunches, too. :)

Our "to go" option has gotten good mention in reviews, and like Flower's Samster's, it is a simple but ample breakfast. In a white paper bag with handles and our logo on the front I pack/person: OJ, fruit (seasonal fruit like apple, orange, banana etc) yogurt (with spoon and napkin), home made muffin, wrapped "healthy" granola-type bar. We put it in the guest fridge the night before so all they have to do is grab and go.

They loved it.
We ended up leaving out a tray at night for them to find in the morning.
A bag with their names and a note on it.
Two envelopes of trail mix; two store bought wrapped strussel bars; two Belvita breakfast packs; 4 individually wrapped homemade muffins and two bananas.
It was layered very prettily on a blue tray. They appreciated it.
