I have made the sour cream & chive bake (recipe here on Innspiring) and either cornbread or the English Muffin bread (on here) baking both eggs & whichever bread in 2 8x8 square pans. Cut the bread like a layer that is going to be filled - because it is. remove top and place bottom portion over the egg bake - Flip. Put top on your 8x8 sandwich and cut into 6 pieces. Each person gets 2 "sandwiches". Wrap in wax paper so it can be heated in a nuker if wished (it is also good cold). I add one of those cheap Gl ad individual size plastic w/lid containers of mixed fruit - but apples, bananas, or oranges would also work, spoon, fork, bottle of water (cold and that keeps the rest cold), napkins, and a .5 oz bottle of waterless hand cleaner. My horse lady from SC wants a container (larger Gl ad w/lid) of the baked oatmeal. She eats it as she waites to cross the border into Canada. I put the vanilla yogurt in another container or add a couple yogurts plus the rest of the above. Coffee to go cup is also standard. She usually leaves here at 3 AM and even I am not getting up for that.
Steal an idea from BK - make French toast in "sticks" rather than slices. Use one of those above mentioned containers (I do not think they were even 50 cents per as they come in packs of 6 or 8 - cannot remember) for syrup as the entree.
