If the guest offers to bring a tray up I hand them a tray. But we don't do room service because we have no tables in the room to sit a tray on.
We had a family of three take their breakfast to their room. Annoyed the living daylights out of me. As, of course, they wanted all the fixin's that are on the tables...salt, pepper, sugar, jams, etc. Silverware. Coffee. Juice. All of it.
