Great minds think alike, I actually gave my mom a copy of that book when they started running their inn so she could better understand vegetarians and vegans. It's well-worn now! She may need a new copy!
I used to manage a shopping center where these were sold. From my experience, these things are a major headache in public places. They look like cigarettes and you can't tell the difference unless you get close.
You end up with tons of people:

Kind of sad that she had to mention not flinching items from a B&B because it would be noticed. But then again, I know my parents are constantly replacing tableware, especially coffee mugs. I guess I should not be surprised.
I've tried stevia products but find they have an after taste. Maybe it's me.

Just googled GF. Looks like corn is considered GF as long as it's not processed or mixed with wheat flour. They may be able to use the masa harina they already have on hand for tamales and make corn tortillas and keep them in the freezer for guests.
