My funeral guy on the 30th said they avoid fruten. He did not say Fruten glee, in fact he said they would not worry about it for the short time they will be here. Another reason for NOT turning him away. Not demanding.I had fruten glee eat pecan pancakes today. Since they put gluten free we had to ask which one of you or both, and they said bring us the pancakes! They didn't eat much and it was a waste, imo, but they savored a few bites..
When they ask for organic only, we do charge extra. That triples my bill. I don't have problem ensuring a Celiac breakfast. We use only certified GF products, frozen and put it no where near gluten. But organic is a paid special request.Another Rez that is celiac came in. No gluten anywhere near her food. At all. And please only serve organic anything else..
I know we did this before but it wasn't easy to cook her breakfast completely separate from everyone else's. No using any of the same utensils or cookware. We use Van's Gluten Free Waffles for a sweet GF and Vegan breakfast. The regular are no-gmo, they also have organic. Separate GF toaster or use the oven. No dairy, no eggs and GF. I'm not sure how she can even walk thru the bread section of a store!
She'll get eggs, that's it. And there is one sausage brand we buy that might be ok. Maybe I can get organic eggs. But even the farmers market doesn't guarantee organic. Nothing else will be organic.

At this point, I would say we cannot do this. You are welcome to bring your own food. You are not a dietitian or a restaurant and should not be expected to follow every guest whim. She needs to know you are not organic. Would she go to a restaurant and tell them everything they serve her has to be organic? I doubt it.Another Rez that is celiac came in. Years ago someone wanted to book our dog room for a week. Her list included being able to cancel if she arrived and had an allergic reaction to any cleaning supplies we might have used that month. A list of cleaning supplies we could/could not use. And that we would not clean while she was there. A week. With a dog. No cleaning.EN, you are right, we are all being bullied.

And it doesn't stop with food... what about those that have detergent allergies etc.
I had a request who had a laundry list of what would need to be done in the room if she were to stay. I thought about it for a while then came to my senses and told her we were not a good fit for her.
She emailed me back 2-3 times reducing her demands, to almost begging to stay.
This woman was traveling for business and she probably does this in every port..

I do love the challenge of creating GF recipes that work for all. I make a GF biscuit that has passed many lips without a question. Another favorite is 100% buckwheat. People just love them and that it is gf only goes out to the guest with the restriction.I went to a family members wedding yesterday and they had a regular cake, but also cupcakes. Turns out the cupcakes were GF and I just couldn't believe it! You would have never known. Whoever their baker was, sure knew what they were doing.
It's interesting that GF has found it's way to most major functions these days..

I've a few try the GF excuse to try to get low carb. Here's your waffle. Need the sugar syrup for it as well? Breakfast 2 for GF/DF/Vegan... a lovely breakfast salad. You don't eat salad in the morning? Why not! It's super healthy, low in calories, no gluten, no fat, no sugar... perfect! (And I get to eat the rest... love salad in the morning!)
