If you are not filling every muffin cup on a muffin baking sheet, put about 1/8 inch of water in the empty muffin cups .. it makes the muffins bake a lot more evenly

Agreed. But just wondering.....why is that? Where's Alton Brown to explain things when I need him?

Seriously----why??.
I think the moisture from the water keeps the sides of the batter-filled cups from getting too dry and hot - kind of a heat diffuser action with the water.
