We have four rooms, max 12, average 4 to 6. Like Gillum, we serve whenever they want to eat, although we'll steer groups together or apart. ("The other famliy is eating at 9, would you like to join them?") Our table is set up for six but can be expanded to eight, or more if they don't mind squishing together.
I strongly agree that one hour is not enough between seatings. On the rare occasions where I have to completely clear an earlier seating for a later one, I really aim to work out at least an hour and a half between. If there's an hour or less, then I set the table for all seatings. This morning's were 7:30 and 9:00 and I set the table once for all of them.
Are you sure they wouldn't move to 7:30? I get a LOT of requests for 7 or 7:30, especially on weekdays.
